For the girl who’s busy but loves a good healthy lunch (or dinner).  This dish is actually heavily inspired by my mom, who made a somewhat similar version to this for me not too long ago.  It’s so good that I needed to recreate it!  This version is a little bit healthier than my mom’s, but still really tasty 🙂

Here’s what you need:

1 1/2 cups riced cauliflower

1 cup fresh broccoli slaw (or riced broccoli)

1/2 package of firm tofu (cubed)

2 large handfuls of fresh spinach

1/2 small white onion (chopped)

3 green onions (chopped)

salt and pepper

1 1/2 tablespoons sesame oil

Mago hot sauce (Rudy’s hot sauce!! find it here) (or sriracha) if desired

sprinkle of sesame seeds

In a large saucepan, heat up sesame oil.  Add white onions and salt and pepper, and sweat for 2-3 min on medium high heat.  Add tofu, and flip over when lightly browned.  Add the cauliflower, broccoli slaw, and spinach on medium low heat.  Cover and let it sit, stirring occasionally, for 6-8 minutes.  Add green onion and stir every 30 seconds for 1-2 minutes.  Garnish with sesame seeds and hot sauce.

This makes about 2-3 servings! Enjoy 🙂
