If you guys saw my Snapchats today (hannamonty), you know I was having a serious health-kick Monday. From the gym to the kitchen, I was whipping up all kinds of stuff that made my body feel GOOD. Including these warm and heavenly cinnamon sugar plantain chips —> my new favorite snack.
Now, never in my life have I bought or tried to cook anything having to do with plantains, but for some reason they stood out to me at the grocery store the other day.. so I got one! And now I’m sharing my recipe with you guys, in case ya’ll are 24/7 snack-attackers like me 🙂
ALL YOU NEED:
1 plantain, (green and unripe, mine wasn’t, but the results are better if it is)
1 1/2 tbsp olive oil, or melted coconut oil!
1 tsp cinnamon
1 tsp sugar
dash of salt
Preheat oven to 400 degrees F. Peel the plantain and cut slices very thin, making sure they are all even. In a bowl, mix the plantain slices with the rest of the ingredients, making sure they are coated evenly. Place the slices on a cookie sheet lined with foil or parchment paper, and put in the oven for 8 minutes, or until brown. Flip slices over, and keep it in the oven for another 8-10 minutes. The slices are ready when they are brown and crispy!
PS: if your plantains are not crisping up, you can put them on broil for a couple minutes, but make sure you have an eye on them because they can burn easily! (Mine got a little burnt hehe).
